Serving temperature: 10-15 °C

Recommended glass: a medium tulip glass with an outward-flared rim, as it directs the wine to both sides of the mouth, where the crisp and savoury taste of young wines is better perceived.

Winemaking: traditional controlled-temperature fermentation.

Colour: ruby red with purple reflections.

Alcohol: about 13-14%.

Harvesting and wine-making: Grapes are picked up by hand and gently laid down into little airy crates, arriving as whole bunches at the winery. Once there, grapes are further selected using an advanced sorting table.

A broad project dedicated to classic method sparkling wines. Tenute Rubino wants the customer to experience the sparkling vocation of some indigenous grape varieties of Salento. It starts with a precious and classy rosé: Sumaré aged 24 months, made from an early harvest of Susumaniello grapes, grown in the Jaddico estate.

Colour: pale and soft salmon pink with fine persistent perlage.

Nosenotes of red berry fruit, pomegranates, raspberries and cherries stand out, fresh with light scents that recall bread crust.

Palate: elegant, savoury, intense and balanced, coherent with the olfactory perceptions. A long and persistent taste.

Pairings: tagliolini with lobster, linguine with clams and tomatoes, fried seafood, mullet or salmon carpaccio, various interpretations of scorpion fish, homegrown vegetable tempura, remarkable with fruit and however to share in many different occasions.

Bouquet: complex and of great impact, clear and charming, it shows fragrant and clean notes that remind cherries in brandy, chocolate and black pepper, plums along with leather, tobacco and clove aromas.

Taste: juicy and vibrant, pleasant to drink , it combines perfectly acidity, smoothness and tannins.

Characteristics: a rich and deep wine, of superior and intense personality, excellent expression of the warm, seductive and elegant Mediterranean features.
