Cantonovo is the most authentic expression of the Murgia hills south east of Bari, hovering between Adriatic and Jonian sea. From the respect of nature, which features a organic wine, up to the vinous scents , in the name of a subtle red. The freshness of red fruits conquers the first sip. The name evokes the natural cycle of life, with the four seasons giving the name to the volumes of the Canto Novo by the poet Gabriele Dannunzio. Grape variety: Primitivo 100% Alcohol content: 13% Vineyards location: Marchione district, on the provincial road Turi-Castellana Grotte (Apulia) Soil characteristics: calcareous and clayey in the karst area of Murgia dei Trulli Training system: espalier Yields per plant: 1 to 4 kg Planting Year: Replanted in the 90’s where there already was the vineyard from early 1900’s. Harvest: in the first half of September the grapes are hand-picked in crates after a careful selection process of the bunches Vinification: with an innovative technique that is carbonic maceration for about 10 days. Winemakingcon una tecnica innovativa che prevede la macerazione carbonica per circa 10 giorni. Al termine di questa fase, si completa con la pigiatura dell’uva e si lascia che l’eventuale residuo zuccherino venga trasformato in alcool nel modo convenzionale.
