Five champions of Salento’s oenology, recognized by audiences and critics, chosen, in Italy and abroad, to enhance the wine lists of the most exclusive restaurants. The "Crus" represent the strengths of a whole productive philosophy, enhancing the quality of the grapes and expressing their best potential.
Colour: bright ruby tending to violet.
Bouquet: fine, delicate, aromatic and intense, it combines notes of raspberry and blueberry with fresh hints of nutmeg, rose and strawberry on an elegant violet background.Taste: Almost “ crunchy” fruit, incredibly pleasant, full and lively, it charms for being able to caress without tiring, gifted with a perfect equilibrium between important structure and gentle acidity.
Food matches: to be honest we suggest you to drink it on its own to fully enjoy its rich opulence. Perfect at the end of a meal, with strawberry and raspberry tart, dried sweets and short crust.
This raisin wine was another big bet of Cosimo Taurino when planted in Puglia the Rhenish-German Riesling and French Semillon. The vines grew slowly in the Salento, so that the first vintage to be bottled was the 2002.
Unfortunately, the one who had wanted so much to believe in this bet, in 1999 he left us. Is dedicated to him this wine, Le Ricordanze.
It’s a dessert wine, from complex and very intense bouquet due to late harvesting of the grapes (late August) which determines a high concentration of sugar.
COLOR: Brilliant gold with sunny, bright nuance.
NOSE: Very intense, as if it were produced in a bee hive rich with floral and fruit aromas. Acacia honey and Cane apple. Orange flower and bergamot.
PALATE: On the palate this wine reveals endless layers of delicate, smooth sensations, with superb balance between its freshness and aromatic character. The sweetness of this wine on the palate reminds some of “kisses desired but never dared to be given…”.
PAIRING: Classic pastries filled with cream or almond paste. Piquant, rich cheeses.
SERVING TEMPERATURE: 14°C. (57°F.).
This ruby red wine has an intense bouquet, ranging from plum jam notes to undertones of cherries in alcohol with hints of cacao. Notes of liquorice come through on the finish. It has a sweet and well-bodied palate, balanced by a pleasant acid note and firm tannins. A lingering aftertaste exalts the same rich bouquet revealed on the nose.
Food pairing: a dessert wine,it is best drunk with almond paste or dry sweets, and with blue cheeses (mature Gorgonzola, Roquefort, etc.).
Serving temperature: 20 °C
Recommended glass: a large bowl-shaped glass with an inward-curved rim: the wine can fully breathe, and the glass can be held better in hands. It will help the temperature rise gradually, and aid in the release of the complex fragrances of more structured wines.
Ageing: 12 months in French oak barrels, 12 months in bottles.
Colour: deep ruby-red with garnet reflections.
Alcohol: about 15,5%.
