l'Archetipo

Winemaking: after destemming and soft crushing grapes, must fer-ments spontaneously thanks to a pied de cuve of native yeasts, the only ones which increase the expression of our Terroir. After 20-30 days of maceration with the skins, at the end of alcoholic fermen-tation, wine is soft pressed in order to separate it from grape skins. Natural fining and stabilization, no fining agents added.No filtration.
Ageing of wine on lees: 6 months in steel tanks, 2-3 months in large wooden barrels and at least 3 months in bottle. Malolactic fermen-tation takes place during aging. Very low amount of sulphur dioxide added before bottling.
Organoleptic properties: ruby red colour; fruity nose (black cherry and plum), with final cloves aroma. Medium body, smooth and ba-lanced, quite tannic, fine and elegant. An authentic Negroamaro!
Food pairing: ideal for pasta with ragù, or soft and fresh cheeses, vegetables and beans soups.

Serving temperature: 15 °C. Decant wine before drinking it.

Harvesting and wine-making: Grapes are picked up by hand and gently laid down into little airy crates, arriving as whole bunches at the winery. Once there, grapes are further selected using an advanced sorting table.
Aging: Eight months in medium-toasted French oak tonneaux; then, eight months of refinement in bottles.
Bouquet: A ruby-red wine with a light shade  of purple. Generous in fruit flavor and spicy notes, its vaguely sweet taste stimulates your imagination. It shows remarkable intrigue  in its complexity and never fails to enchant with its supple, finely textured palate.

Le uve, provenienti da vigneti di proprietà in agro di Salice Salentino (Lecce), sono state raccolte manualmente nel mese di settembre e accuratamente selezionate prima della pigiatura. Il mosto ha effettuato una lunga macerazione sulle bucce in serbatoi di acciaio inox a temperatura controllata per più di 20 giorni, per poi svolgere la fermentazione mallolattica. Il vino così ottenuto si affina per 12 mesi in piccole botti, per poi essere imbottigliato e completare l’affinamento in bottiglia per ulteriori 12 mesi.

Apollonio

2015


Deep ruby red wine with vivid reflections. Thanks to its long-term aging in bottle, it has intense fragrances of sour cherry jam with intriguing notes of cinnamon and dried figs. Its palate is well-structured with perfectly balanced tannins and an elegant aroma of liquorice. Pleasant fruity notes recall those felt on the nose.

Food pairing: pork chops; roasted or stewed horsemeat; game; medium matured cheeses.

Serving temperature: 18 °C

Recommended glass: a large bowl-shaped glass with an inward-curved rim: the wine can fully breathe, and the glass can be held better in hands. It will help the temperature rise gradually, and aid in the release of the complex fragrances of more structured wines.

Ageing: 6 months in French oak barrels, 6 months in bottles.

Colour: intense ruby-red.

Alcohol: about 14-15%.

Color: Inexpugnable ruby red, offering the eyes a preview of the wines complex structure, flavors, and aromas.

Nose: Notes of rose and violet emerge in a slow, long-lasting progression, giving way to wild fruit, dried fig, preserves, and vanilla.

Palate: The same aromatic equilibrium reappears in the mouth, releasing delicate progressions of fruit and spice. The rich, balanced flavor of this wine’s components give it its distinctive imprint. And its extreme delicacy closes with ample, persistent flavors in the finish.

Pairing: Well aged ripe cheeses, smoked and spicy cured meats. Intensely flavored meat dishes, ideally complex in their flavor profiles. Ass and horse are among the winemaker’s favorite pairings as are meat-based first courses. This is a wine (as strange as it may sound) that doesn’t mind the company of a good cigar.

Serving Temperature: 18° C. (64° F.).
