Le uve vengono pigiate delicatamente e raffreddate a 10/12 °C. Questo consente di portare i tempi di macerazione fino a oltre 24 ore, limitando l’estrazione di tannini. La svinatura avviene quando il mosto ha raggiunto la tonalita e le caratteristiche ottimali. Alla fine della fermentazione alcolica, svolta a 16 °C, il vino matura sur lies per circa 4 mesi. Da bere subito o conservare per 2-3 anni.

COLOR: Intense straw yellow with nuanced golden and green tones.

NOSE: Spicy aromas emerge immediately on the nose, giving way to a rainbow of overflowing floral and fruit aromas. Acacia and vine flowers together with local and exotic, ripe fruit.

PALATE: Silky in the mouth, velvety and mellifluous, with freshness and sweet spices imparted by selected wood used during aging. The finish wins over the drinker with its length and its terroir expression.

PAIRING: This wine is extremely generous when it comes to pairing. From intensely flavored seafood to vegetables and white meats and cheeses. Fried foods and mushrooms are among the winemaker’s favorite pairings.

The wine is aged for 12 months in 1st and 2nd passage French Oak barriques followed by 12 months in larger French Oak barrels. Bottle refinement lasts for 6 months before release. Structured, fine and elegant, this full and round wine has a long lasting finish.

Apollonio

An intense, enchanting bouquet with notes of blackberries and ripe red berries intertwined with spices. On the palate it is full-bodied yet supple, with smooth tannins and a balanced acidity that keeps it fresh. It has a very long finish, with the same fruity notes as those felt on the nose.

Food pairing: excellent with game, grilled or stewed red meat, and hard or sharp cheese.

Serving temperature: 20°C

Recommended glass: As a complex wine, a large bowl-shaped glass with an inward-curved rim is recommended: it can fully breathe, and the glass can be held better in hands. It will help the temperature rise gradually, and aid the release of the complex fragrances of more structured wines.

Ageing: 12 months in French oak barrels, 12 months in bottles.

Colour: dark ruby-red.

Alcohol: about 14-15%.
