Fermentation: first a cold (41° Fahrenheit, or 5° Centigrade) maceration on the skins for five days prior to fermentation in bring out the aromas, the color, and the supple structuring elements of the future wine; the must is then run off its skins and fermented at 64° Fahrenheit (18° Centigrade)

2019

Selected grapes cultivated at our Maìme estate in San Pietro Vernotico (Province of Brindisi), was a positive vintage for the grapes with a long growing season and a slow and gradual ripening of the crop. The high peak temperatures of the preceding vintages were notably absent, and temperatures, wind, and humidity were all quite favorable.
In terms of the size of the crop, it was more substantial due to the positive climate of the entire year: abundant rainfall during the winter and normal and regular temperatures during the spring and summer.
Useful temperature swings from daytime heat to evening and nighttime coolness, along with the established practice of picking the grapes for the white and rosé wines only during the early – and cooler - hours of the day, assisted in achieving grapes of excellent quality with a sustained and refreshing acidity. The harvest of the white grapes at the Maìme estate began approximately a week later than in other recent vintages. The Fiano grapes were picked between September 5th and 10th.

Negroamaro 100% Selected from the vineyards of the Maime estate in San Pietro Vernotico (province of Brindisi).
The weather of the 2015 growing season was decidedly “Mediterranean”, marked as it was by a springtime of regular temperatures and humidity and then a decidedly hot and dry summer.
The excellent balance between vegetation and grapes in our vineyards led, nonetheless, to a proper and sustained growth of the vines and ripening of the fruit, to the point that the Negroamaro harvest took place during the first week of September, in line with the historic pattern of our estate.

Early spring was characterized by higher than average temperatures bud burst which arrived approximately a week early. continued, however, the rest of the spring and delaying the subsequent phases of growth and development o rise to the principal types of vine diseases, particularly downy mildew. conditions, a careful and vigilant viticulture was of fundamental importance, attentive and timely in its interventions in the vineyard to preserve t the vines and grapes and the quality of the crop.

2017

2013 was a vintage with positive weather throughout the entire year, abundant rainfall during the winter months and regular temperatures during the spring and summer seasons. The peak temperatures which characterized the previous vintages were absent; temperatures, winds, and humidity were all favorable.
Positive temperature swings from daytime heat to evening and nighttime coolness assisted in achieving an excellent physiological ripening of the grapes, a interesting aromatic profile, and a vigorous acidity.
As an early-ripening variety, Primitivo felt to a greater extent the consequences of delays in ripening, and the grapes, in fact, matured a week later than usual, during the first ten days of September.

2018

The 2014 vintage, marked by anomalous climate during the growing season, was a difficult and rainy one.
Early spring was characterized by above average temperatures, creating the conditions for a bud burst which arrived a week earlier than the normal period. As the growing season followed, however, a very cool and quite rainy spring and summer slowed down the various phases of growth and development of the plants and grapes and caused outbreaks of vine diseases, above all downy mildew. With unfavorable conditions of this sort, a particularly meticulous, attentive and timely viticulture was necessary in order to preserve healthy conditions in the vineyard and grapes of real quality.
The Chardonnay for Pietrabianca was picked between the 22nd and the 28th of August, while the Fiano was harvested in mid-September with an aromatic profile and a vibrantly savory personality of much finesse and elegance.

2015

The climate of late autumn and winter was c rain. The vineyards, accordingly, were able to accumulate reserves of ground water for the warmer months to come. Spring was rather mild, and sunny days and warm temperatures favored the a positive growth of vegetation and formation of the grape bunches. Temperatures rose from June on and stabilized at As the growing season continued through the summer months scarce and infrequent, leading to a proper ripening of the crop. The picking of the Negroamaro took place in mid September

2017

The growing season in the Castel del Monte area, where the Bocca di Lupo vineyards are located, had two distinct phases: the first, from March to July, was characterized by rather cool weather with frequent rainfall, phenomenon which caused some delay in plant and grape growth and development, while the second, beginning in early August, hot and dry and lasting all the way through the harvest itself, assisted in a full and complete recovery of the previous delay and an excellent ripening of the crop. The picking of the Aglianico grapes in the proprietary vineyards of the estate began on October 5th and continued up to the 20th of the month with high level results in terms of grape quality. The 2011 vintage will surely be considered one of the finest of all for the qualitative excellent of the wines produced.
