Born from a blend of the three autochthonous grapes: 60% verdeca, 35% White On Alessano, 5% Minutolo Antico is a white wine with a PDO (Protected Designation of Origin) typical of Valle d'Itria product since past by farmers in the place to try to exploit the resources of the territory. As the name already suggests, the Old is vinified according to the tradition of the old farmers and wine producers in the Itria Valley, with a traditional farming system sapling, the grapes of the three local wines are combined in predetermined quantity since the plant then harvested, de-stemmed and vinified together with the most modern winemaking techniques.

Tormaresca

180,000 bottles per year from the handpicked grapes of the Maime estate in San Pietro Vernotico (province of Brindisi)

Fermentation: first a cold (41° Fahrenheit, or 5° Centigrade) maceration on the skins for five days prior to fermentation in bring out the aromas, the color, and the supple structuring elements of the future wine; the must is then run off its skins and fermented at 64° Fahrenheit (18° Centigrade)

Tormaresca

Selected grapes cultivated at our Maìme estate in San Pietro Vernotico (Province of Brindisi), was a positive vintage for the grapes with a long growing season and a slow and gradual ripening of the crop. The high peak temperatures of the preceding vintages were notably absent, and temperatures, wind, and humidity were all quite favorable.
In terms of the size of the crop, it was more substantial due to the positive climate of the entire year: abundant rainfall during the winter and normal and regular temperatures during the spring and summer.
Useful temperature swings from daytime heat to evening and nighttime coolness, along with the established practice of picking the grapes for the white and rosé wines only during the early – and cooler - hours of the day, assisted in achieving grapes of excellent quality with a sustained and refreshing acidity. The harvest of the white grapes at the Maìme estate began approximately a week later than in other recent vintages. The Fiano grapes were picked between September 5th and 10th.

Michele Calò

THE VINIFICATION: Traditional vinification with a continuing maceration of
grape skin lasting 7,8 days according to the vintage and the racking-off,
with an evident intensity of colors and scents. When the grape-harvest ends,
the starting ageing of wine occurs partly (60%) in steel containers and
the remaining part (40%) in small valuable oak barrels for about
12 months. Then the wine blending occurs and after a period of rest,
the product is bottled and put on the market after an ageing
in bottle of 6 months.

Food matches: Versatile and seductive, it goes well with savoury dishes such as stuffed aubergines and peppers, orecchiette with tomato sauce, risotto with porcini mushrooms. It pairs well with cold cuts, semi-cured cheeses and grilled meats.

Vini Leone De Castris

We produce Salice since 1954, to celebrate this historic wine, from the 2004 vin-tage the label has the writing 50th vintage. Wine of an intense red colour with garnet-coloured hints, made of Negroamaro and Malvasia Nera. To the nose fruity sensations of blackberry and black cherry, notes of basil and sweet spices due to the refinement in oak barrels. In the mouth it is smooth and balanced with a strong but never intrusive tannin. Long last fin-ish. Very good with roasts and ripe cheese.

VARIETY INFORMATION

Primitivo is a black berry vine native to Puglia, owes its name to the characteristic vegetative phases of the plant, all early, from ripening to sprouting, from flowering to veraison, hence the old name "Primaticcio".

Food pairing:a well-structured wine, it is best drunk with white or cured meats, foil-baked, grilled or stewed fish, and fresh cheese.

Serving temperature: 10-12 °C

Recommended glass: a large bowl-shaped glass with an inward-curved rim: the wine can fully breathe, and the glass can be held better in hands. It will help the temperature rise gradually, and aid in the release of the complex fragrances of more structured wines.

Ageing: 12 months in Acacia barrels, 6 months in bottles.

Colour: bright salmon pink in the glass, with hints of gold.

Alcohol: about 14%

Attanasio

Tasting Notes: Deep ruby red color, red jam, raspberries, blueberry, anise, sweet spices nose. The body is full and tasty with soft tannins and alcohol which create a good balance, the elegance is surprising. Very long finish with sweet cherries notes. After 12 months of aging in oak barrels, the wine reaches one of the most complex and sophisticated olfactory compositions while maintaining the taste of indigenous grapes.
