From the legend of Acanto, a Greek nymph changed into a flower after refusing Apollo’s advances.
This pure Fiano is fermented in steel at a low temperature for a fortnight in order to preserve the aromatic characteristics and is then left to age on its own yeasts to enrich the mineral notes and flavour. This is a balanced wine that unfolds in the nose with intense perfumes of fruit and honey and a fresh lively taste with a smooth finish of toasted hazelnut. Served thoroughly cooled, it is ideal with hors d’oeuvres, seafood salads, rice, crustaceans, grilled fish and fresh cheeses.

The bunches are picked by hand very early in the morning when the temperature is cooler. A part of the wine matures for 6 months in French barriques of various toastings, while the rest remains in steel. Dark crimson-red colour, is a wine with body and structure. Full bouquet of ripe red fruits, with notes of pepper and vanilla and hints of Mediterranean scrub. Robust, concentrated, soft but firm flavour.

Color: Ruby red with delicate garnet undertones.
Nose: The minerality of the nose creates a delicate combination of morello and sour cherry and prune. Floral and spicy notes follow in a superbly persistent finish.
Palate: Gentle tannins, impressive acidity combine with the classic delicacy and alcoholic content of Primitivo in the flavors of this once forceful but now elegant and noble wine.
Pairing: Pasta with rich meat sauces, excellent with red meat and in particular lamb. An ideal pairing for moderately aged as well as intense ripe cheeses.

Interestingly, just 20 days after the harvest, Primitivo vines produce new grapes, traditionally called "second harvest"; these younger bunches are used by the winemaker to increase the freshness and acidity of these bold wines, given as a result a perfectly well-balanced red wine.
TASTING NOTES: deep ruby color; pronounced bouquet of black berries, mainly cassis and black currant, with notes of licorice and coconut; full-bodied and balanced, with velvety tannins and a perfect acidity; lingering finish of forest fruits and spices jam.
