From the legend of Acanto, a Greek nymph changed into a flower after refusing Apollo’s advances.
This pure Fiano is fermented in steel at a low temperature for a fortnight in order to preserve the aromatic characteristics and is then left to age on its own yeasts to enrich the mineral notes and flavour. This is a balanced wine that unfolds in the nose with intense perfumes of fruit and honey and a fresh lively taste with a smooth finish of toasted hazelnut. Served thoroughly cooled, it is ideal with hors d’oeuvres, seafood salads, rice, crustaceans, grilled fish and fresh cheeses.

Acante Fiano Salento IGT

Not far from the town of Lecce and from the sea, on the road to Taranto, at the gates of Salice Salentino, centuries-old olive trees and luxuriant vineyards surround Castello Monaci. The long corridor which links the main road to the castle is a line which goes thro ugh the estate, a meridian which divides the vineyards and opens the gates to the modern cellar. Here spreads the sun which floods the land with light and creates unique shapes, like the fruits to which it gives birth. Castello Monaci. Crafted by the sun.
Fiano found Salento to be just the right place to expand successfully. Compared with its Campania cousin Fiano Salentino offers greater freshness and minerality.

The grapes: 100% Fiano

The vineyard: vines trained using the guyot system on deep dry clay soil with the presence of tuffaceous limestone; the average yield per hectare is 9 tonnes.
Vinification: the grapes are harvested around the second decade of September during the coolest hours of the night. A slight maceration on the skins to guarantee perfect and complete extraction of the wine's aromatic fraction is followed by fermentation in steel at low temperatures (8-12°) for a fortnight. The wine then ages on its yeasts to enrich the mineral notes and flavour.

The wine: a tenuous straw yellow colour; an ample aroma of fruit (pear, pineapple) and honey; a fresh, lively and balanced flavour with notes of fresh fruit and an attractive finale of toasted hazelnut.
Analytical data: alcohol 12.00 %; total acidity 5.00 g/l; pH 3.40; sugars 3.0 g/l; extract 20g/l.

Ideal conservation: 1 year in bottles on their sides in a cool dark environment. Food pairings: hors d'oeuvres, seafood salads, risotto, crustaceans, grilled fish, fresh cheeses and grilled vegetables.
