PILUNA PRIMITIVO SALENTO IGT

Not far from the town of Lecce and from the sea, on th e road to Taranto, at the gates of Salice Salentino, centuries-old olive trees and luxuriant vineyards surround Castello Monaci. The long corridor which links the main road to the castle is a line which goes through the estate, a meridian which divides the vineyards and opens the gates to the modern cellar. Here spreads the sun which floods the land with light and creates unique shapes, like the fruits to which it gives birth. Castello Monaci. Crafted by the sun.
Piluna or “pot made of tufa” in Greek is the name chosen for this Primitivo. A name evocative of a land which breathes, dedicated to its best indigenous grape varieties, a lively, generous, intense name like the place from which it comes.
Grapes: 100% primitivo.
Vineyard: parcels trained by the alberello Pugliese and cordone speronato systems on deep, dry clayey soil with some tufaceous limestone; the average yield is 70 quintals of grapes per hectare.
Vinification: the bunches are picked by hand only from dawn until 9 o’clock in the morning when the temperature is cooler. Vinification takes place at a controlled temperature with about 2 weeks maceration and frequent remontages. Following the malolactic fermentation, part matures for 6 months in French barriques of various toastings, while the rest remains in steel.
Wine: dark crimson-red colour; full bouquet of ripe red fruits and cherry conserve, with notes of pepper and vanilla and hints of Mediterranean scrub; robust, concentrated, soft but very firm flavour with an elegant, lingering aftertaste of small black fruits conserve and liquorice.
Analytical details: 14.00% alcohol; 5.70 g/l total acidity; 3.60pH; 4g/l residual sugar; 31g/l dry extract.
Optimum keeping: 4-5 years in bottles stored horizontally in cool, dark conditions.
Food matches: roast or braised red meats, game, mature cheeses. Serving temperature: 16°C.
