Our Pungirosa is a crisp, refreshing rosé bursting with flavor, with a forward, vivacious fruitiness that makes it a great companion to most dishes. Enjoy it also as a wonderfully appealing aperitif.

Apollonio

2021

Food pairingbest drunk with aperitifs or appetizers (platters of salamis, hams), and with meat-based pasta dishes. It also goes with fish dishes like seafood salad, grilled fish and Adriatic fish soups.

Serving temperature: 10-15 °C

Recommended glass: a medium tulip glass with an outward-flared rim, as it directs the wine to both sides of the mouth, where the crisp and savoury taste of young wines is better perceived.

Winemaking/Aging: soft pressing, so as to preserve the floral, fruity taste of these grapes. Two weeks of controlled-temperature fermentation. Aged in steel tanks for three months. Bottling in February.

Colour: Coral red with copper reflections.

Alcohol: about 12-13%.

Pairing: Excellent with cheese soufflé, vegetable torts, and intensely flavored seafood and soups. Eggs, poached or scrambled, are also a favorite pairing.

Paolo Leo

Well-known expression of the Apulian terroir, rosé wine is traditionally produced specially in Salento, where the combination of climate and soil gives fresh, fruity rosé wines. Negroamaro grapes particularly are able to produce one of the most interesting rosé in Italy, due to their freshness, red fruity aromas and unmistakable character. 
TASTING NOTES: Bright pink color; aromas of raspberry and strawberry, with some nuances of black pepper and Mediterranean herbs, typical from Negroamaro. Fresh and salty on the palate, medium body and good acidity, with a pleasant fruity after taste.

Castello Monaci

Produced from 100% Negroamaro grapes picked in the earliest hours of the morning and immediately taken to the cellar where they undergo a gentle crushing. From a very short contact between the skins and the must is born a wine with a bright pink colour, a floral and fruity bouquet and a full and elegant flavour, with a light, fruity aftertaste which lingers in the mouth.

Rosso corallo, brillante, con toni cerasuoli. Al naso richiama note di fiori, con sfumature di frutti rossi;, piacevole, nitido e di buona freschezza al palato. Clou de girofle, il chiodo di garofano, è una spezia forte dall’aroma penetrante, caldo e ricco; il sapore è insieme pungente e amaro. Le spezie raccontano profumi e sapori esotici riconducibili molte volte ai caratteri e ai valori dei vini, in special modo di questo prezioso vitigno capace di segnare sottilmente il suo rosato e in modo più suggestivo i suoi grandi rossi invecchiati.
