Salice Salentino DOP is the most important appellation of Salento. It recognizes an area where wine has been produced since the VI century BC, being currently one of the most international renewed Puglian appellation. Salice Salentino wine is mainly made from Negroamaro grapes, and then other native varieties like Malvasia Nera di Lecce.
TASTING NOTES: ruby color with garnet tinges; elegant and pronounced bouquet of black fruits and black pepper, with hints licorice and vanilla; round and full bodied, harmonious, with velvety and smooth tannins. Lingering finish of blackcurrant and spices.

2013 was a vintage with positive weather throughout the entire year, abundant rainfall during the winter months and regular temperatures during the spring and summer seasons. The peak temperatures which characterized the previous vintages were absent; temperatures, winds, and humidity were all favorable.
Positive temperature swings from daytime heat to evening and nighttime coolness assisted in achieving an excellent physiological ripening of the grapes, a interesting aromatic profile, and a vigorous acidity.
As an early-ripening variety, Primitivo felt to a greater extent the consequences of delays in ripening, and the grapes, in fact, matured a week later than usual, during the first ten days of September.

Serving temperature: 10-12 °C
Recommended glass: a large bowl-shaped glass with an inward-curved rim: the wine can fully breathe, and the glass can be held better in hands. It will help the temperature rise gradually, and aid in the release of the complex fragrances of more structured wines.
Ageing: 12 months in Acacia barrels, 6 months in bottles.
Colour: bright salmon pink in the glass, with hints of gold.

Sparkling brilliant wine of a light pink colour called “ onion peel” with a fine and persistent perlage.
The nose is rich and intense with hints of bluberry, redcurrant and rose petals.
To the palate it is smooth and elegant enriched by a nice freshness. Perfect as aperitif and with shellfish, nice also with medium aged chesees “Metodo Classico”- the base wine ferments in bottle for about 2 months, followed by a refinement “sur lie” for about 30 months.

A ruby-red, almost impenetrable wine that suggests a rich bouquet. Balanced and full bodied, it gradually discloses a vinous fragrance that gives way to notes of blackberries, sour cherries and currants, with hints of spices in the finish. It is supple, round and full-bodied in the mouth, with persistent tannins.
Food pairing: excellent withgame, and grilled or stewedred meats.

The growing season in the Castel del Monte area, where the Bocca di Lupo vineyards are located, had two distinct phases: the first, from March to July, was characterized by rather cool weather with frequent rainfall, phenomenon which caused some delay in plant and grape growth and development, while the second, beginning in early August, hot and dry and lasting all the way through the harvest itself, assisted in a full and complete recovery of the previous delay and an excellent ripening of the crop. The picking of the Aglianico grapes in the proprietary vineyards of the estate began on October 5th and continued up to the 20th of the month with high level results in terms of grape quality. The 2011 vintage will surely be considered one of the finest of all for the qualitative excellent of the wines produced.
