VARIETY INFORMATION
Susumaniello is a black grape variety native to Puglia and grown in Salento. The name suggests it is derived from the word "somarello", a term used in Apulian dialect. Traditionally the meaning expresses the
increased productivity of a plant weighted down by bunches, such as "a load carried by a donkey". After the first decade of the vine's life, the bunches of grapes are removed and its production lessens in quantity but improves in quality, producing wines of great expression.
PAIRING RECOMMENDATIONS
Seafood appetizers, risotto alla pescatora, tagliolini pasta with prawn tartare or meat tartare.

Verdeca is a white grape variety native to Puglia, its greenish shade is suggested in its name. An elegant variety with great vigour.
COLOUR: Straw yellow with greenish reflections.
AROMAS: Fruity and floral with hints of green apple, white flowers and elderberry.
PALATE: Fruity and citrusy with elegant aromatic notes, there is a marked minerality and sapidity.
PAIRING RECOMMENDATIONS: Raw seafood, fried fish, vegetables and fresh cheeses.

Grape harvest, appropriately anticipated, gives to the product a good total acidity and so a relevant endurance in time. With a meticolous selection of grapes which are pressed softly just the free-run must or "mosto fiore", about the 30%, is used for the final product.

VARIETY INFORMATION
Negroamaro, native to Puglia, is the main black grape variety of Salento. Its origins are very ancient (8th century B.C.) and likely owes its name to the terms "niger" (Latin) and "mavros" (Greek) which both refer to the colour black. Its great versatility makes it suitable for all types of winemaking.
PAIRING RECOMMENDATIONS: Meatballs with sauce, legume soups, orecchiette pasta with meat sauce and barbecued lamb.
