Apollonio

Reserve 2009

This ruby red wine has an intense bouquet, ranging from plum jam notes to undertones of cherries in alcohol with hints of cacao. Notes of liquorice come through on the finish. It has a sweet and well-bodied palate, balanced by a pleasant acid note and firm tannins. A lingering aftertaste exalts the same rich bouquet revealed on the nose.

Food pairing: a dessert wine,it is best drunk with almond paste or dry sweets, and with blue cheeses (mature Gorgonzola, Roquefort, etc.).

Serving temperature: 20 °C

Recommended glass: a large bowl-shaped glass with an inward-curved rim: the wine can fully breathe, and the glass can be held better in hands. It will help the temperature rise gradually, and aid in the release of the complex fragrances of more structured wines.

Ageing: 12 months in French oak barrels, 12 months in bottles.

Colour: deep ruby-red with garnet reflections.

Alcohol: about 15,5%.

Puer Apuliae or “Son of Puglia”: so was called Frederick II of Swabia, the 13th century Emperor of the Holy Roman Empire who loved this region so much that he had the Castel del Monte, his most incredible and mysterious monument, built here, leaving an indelible memorial for the whole of humanity. Thus we called this wine Puer Apuliae, for being the child of the most representative indigenous black grape variety in central Puglia: Nero di Troia.

Acini Spargoli è un vino che nel calice si annuncia con un brillante color rosso rubino. Ricco di intensi sentori di bacche rosse, caffè e liquirizia.
In bocca conferma le note olfattive regalando calde sensazioni di frutta secca e spezie dolci.
Si avverte un buon tannino mitigato da un’equilibrata morbidezza e supportato da una calda concentrazione alcolica. Elegante, profondo, di buona complessità con finale di legno tostato. L’energia espressa al palato lo porta ad accompagnare piatti importanti, dai caratteri sapidi e ben strutturati.

Reserve 2012

A wide range of aromas can be found in it. Its sumptuous, enticing fragrances resemble ripe red fruits, spicy notes like black pepper or cloves, and a delicate touch of coffee. Its well-bodied palate is firmly structured and intense, with good tannins. It has a long finish with a lingering fruity note.

Food pairing: roasted or grilled red meat, meat pies, oven-baked lamb, savoury and mature cheeses.

Severino Garofano

2014

The grapes come from old alberello-trained vines of Negroamaro, picked late. The surmaturation, or slight raisining of the grapes, gives the wine a complex structure.
Intense colour with purple tints, tending to garnet. This is a wine which develops all its potential character during refinement in small barrels, a process which stabilizes the colour and softens the astringency of the tannins: the wine acquires a fresh aroma and a regal sumptuosity.
