It is recommendable to pour out carefully to eliminate the possible dregs due to the sedimentation in the bottle.

Negroamaro 100% Selected from the vineyards of the Maime estate in San Pietro Vernotico (province of Brindisi).
The weather of the 2015 growing season was decidedly “Mediterranean”, marked as it was by a springtime of regular temperatures and humidity and then a decidedly hot and dry summer.
The excellent balance between vegetation and grapes in our vineyards led, nonetheless, to a proper and sustained growth of the vines and ripening of the fruit, to the point that the Negroamaro harvest took place during the first week of September, in line with the historic pattern of our estate.

TERRITORY
The Salento region is identified by three climatic elements: the sun, the architect that creates generous degrees of sugar, the sea, responsible for the minerality of the wines, and the wind that makes this area naturally free of disease and particularly suitable for the production of "natural" wines. Characterized by extensive flat areas and modest hilly reliefs, the Salento region is geologically constituted by a calcareous structure of medium texture.
VARIETY INFORMATION
Negroamaro, native to Puglia, is the main black grape variety of Salento. Its origins are very ancient (8th century B.C.) and likely owes its name to the terms "niger" (Latin) and "mavros" (Greek) which both refer to the colour black. Its great versatility makes it suitable for all types of winemaking.
PAIRING RECOMMENDATIONS: Meatballs with sauce, legume soups, orecchiette pasta with meat sauce and barbecued lamb.

The Five Roses Anniversario was created for the first time with the vintage ’93, in the occasion of the 50th anniversary of the Five Roses.
Nice and brilliant cherry-red colour, heady scent of blackberry, red cur-rant and rose. To the palate it is rich in fresh acidity, great structure and a fruity and persistent finish. Suggested with “risotto”, fish and white meat. Great also with sushi and as aperitif.

We produce Salice since 1954, to celebrate this historic wine, from the 2004 vin-tage the label has the writing 50th vintage. Wine of an intense red colour with garnet-coloured hints, made of Negroamaro and Malvasia Nera. To the nose fruity sensations of blackberry and black cherry, notes of basil and sweet spices due to the refinement in oak barrels. In the mouth it is smooth and balanced with a strong but never intrusive tannin. Long last fin-ish. Very good with roasts and ripe cheese.

COLOR: Intense straw yellow with nuanced golden and green tones.
NOSE: Spicy aromas emerge immediately on the nose, giving way to a rainbow of overflowing floral and fruit aromas. Acacia and vine flowers together with local and exotic, ripe fruit.
PALATE: Silky in the mouth, velvety and mellifluous, with freshness and sweet spices imparted by selected wood used during aging. The finish wins over the drinker with its length and its terroir expression.
PAIRING: This wine is extremely generous when it comes to pairing. From intensely flavored seafood to vegetables and white meats and cheeses. Fried foods and mushrooms are among the winemaker’s favorite pairings.
SERVING TEMPERATURE: 14° C. (57° F.).

L’affinamento avviene in parte (70%) in acciaio inox e la rimanente parte (30%) in piccoli carati di rovere pregiato per un periodo di circa 12 mesi. Successivamente avviene l’assemblaggio e, dopo un periodo di riposo, il prodotto viene messo in bottiglia e posto in vendita dopo 6 mesi circa di affinamento in bottiglia. MJERE Rosso è caratterizzato da un colore rosso rubino con riflessi granata. Ha un profumo ampio con sentori di frutta di bosco, prugna. Al palato presenta un sapore asciutto, con piacevole retrogusto amarognolo e allo stesso tempo morbido. Di buon equilibrio e persistente. Da servire a una temperatura di 16-18 °C

Ageing of wine on lees: 2 years in steel tanks, shaking it every 15 days. Very low amount of sulphur dioxide added before bottling.
Organoleptic properties: golden yellow colour; fine and intense fru-ity, floral and grassy nose, with spicy and mineral finish. Medium body, balanced, scarcely tannic, soft taste and very long freshness.
Food pairing: ideal with all dishes that need a structured wine with a good freshness; very good with fishes and white meat.
Serving temperature: 10-12°C.
