The Apollonio Wine Company has a long and deep-rooted history, and was awarded with the title of "Impresa Storica d’Italia" (Historic Company of Italy). This four-generation history – yet always evolving remaining faithful to itself – began in 1870, when Noè Apollonio started his adventure, followed by his son Marcello, who would later modernized the small firm. After World War II, Marcello’s son, Salvatore, marked a turning point by introducing business management. Today, it is the turn of the fourth generation to run the company: Marcello and Massimiliano Apollonio have succeeded in exporting a label that is a byword for first-rate quality and trustworthiness all over the world.

Meticulous as they are, Marcello and Massimiliano Apollonio have created 5 wine production lines, which interpret the Salento territory, its typicity and fascination, by using traditional as well as modern methods, and advanced technologies. In 1999, they also founded another wine firm, named "Terre del Grico", which produces an innovative wine line, with a strong, distinctive character that reflects the passion of those who cultivate its vineyards.

TERRITORY
The Salento region is identified by three climatic elements: the sun, the architect that creates generous degrees of sugar, the sea, responsible for the minerality of the wines, and the wind that makes this area naturally free of disease and particularly suitable for the production of "natural" wines. Characterized by extensive flat areas and modest hilly reliefs, the Salento region is geologically constituted by a calcareous structure of medium texture.
VARIETY INFORMATION
Negroamaro, native to Puglia, is the main black grape variety of Salento. Its origins are very ancient (8th century B.C.) and likely owes its name to the terms "niger" (Latin) and "mavros" (Greek) which both refer to the colour black. Its great versatility makes it suitable for all types of winemaking.
PAIRING RECOMMENDATIONS: Meatballs with sauce, legume soups, orecchiette pasta with meat sauce and barbecued lamb.

2020

This is a scented, easy-drinking white wine. Straw yellow in colour with light green hues. On the nose, it offers elegant fragrances with herbaceous undertones and aromas of fresh fruit. Dry, smooth and medium-bodied on the palate, it has a round, crisp taste with a quite persistent fruity and almond finish.

Food pairing: a structured wine, best drunk withwhite or cured meats, seafood, and fresh cheeses.

Serving temperature: 10-12 °C

Recommended glass: a medium tulip glass with an outward-flared rim, as it directs the wine to both sides of the mouth, where the crisp and savoury taste of young wines is best perceived.

Winemaking/Aging: soft pressing, so as to preserve the floral, fruity taste of these grapes. Two weeks of controlled-temperature fermentation, then in steel tanks to complete its maturation. Aged in Acacia barrels for three months. Bottling in February.

Deep ruby red wine with vivid reflections. Thanks to its long-term aging in bottle, it has intense fragrances of sour cherry jam with intriguing notes of cinnamon and dried figs. Its palate is well-structured with perfectly balanced tannins and an elegant aroma of liquorice. Pleasant fruity notes recall those felt on the nose.

Food pairing: pork chops; roasted or stewed horsemeat; game; medium matured cheeses.

Primitivo is a black berry vine native to Puglia, owes its name to the characteristic vegetative phases of the plant, all early, from ripening to sprouting, from flowering to veraison, hence the old name "Primaticcio".

Reserve 2009

This ruby red wine has an intense bouquet, ranging from plum jam notes to undertones of cherries in alcohol with hints of cacao. Notes of liquorice come through on the finish. It has a sweet and well-bodied palate, balanced by a pleasant acid note and firm tannins. A lingering aftertaste exalts the same rich bouquet revealed on the nose.

Food pairing: a dessert wine,it is best drunk with almond paste or dry sweets, and with blue cheeses (mature Gorgonzola, Roquefort, etc.).
