The Apollonio Wine Company has a long and deep-rooted history, and was awarded with the title of "Impresa Storica d’Italia" (Historic Company of Italy). This four-generation history – yet always evolving remaining faithful to itself – began in 1870, when Noè Apollonio started his adventure, followed by his son Marcello, who would later modernized the small firm. After World War II, Marcello’s son, Salvatore, marked a turning point by introducing business management. Today, it is the turn of the fourth generation to run the company: Marcello and Massimiliano Apollonio have succeeded in exporting a label that is a byword for first-rate quality and trustworthiness all over the world.
5 Wine Lines

Meticulous as they are, Marcello and Massimiliano Apollonio have created 5 wine production lines, which interpret the Salento territory, its typicity and fascination, by using traditional as well as modern methods, and advanced technologies. In 1999, they also founded another wine firm, named "Terre del Grico", which produces an innovative wine line, with a strong, distinctive character that reflects the passion of those who cultivate its vineyards.

Rocca dei Mori

2016

A clean, tasty and generous wine. A floral note enhances its freshness on the palate, with pleasant vegetal undertones. It is a warm, rounded wine with a delightful freshness coming through. Pleasant persistence.

Food pairing: best drunk with aperitifs or appetizers. It also goes with meat dishes (rabbit, veal, lamb, etc.).

Serving temperature: 18°C

Recommended glass: a medium tulip glass with an outward-flared rim, as it directs the wine to both sides of the mouth, where the crisp and savoury taste of young wines is better perceived.

Winemaking: controlled-temperature fermentation.

Colour: ruby red with purple reflections.

Alcohol: about 13%.

Rocca dei Mori

2018

A very intense, fragrant bouquet with notes of soft fruits and ripe cherries. Dry and smooth on the palate, it is round and well-balanced with a persistent freshness due to its good acidity.

Food pairing: best drunk with aperitifs or appetizers (platters of salamis, hams), and with meat-based pasta dishes. It also goes with fish dishes like seafood salad, grilled fish and Adriatic fish soups.

Serving temperature: 8-10°C

Recommended glass: a medium tulip glass with an outward-flared rim, as it directs the wine to both sides of the mouth, where the crisp and savoury taste of young wines is better perceived.

Winemaking/Aging: soft pressing, so as to preserve the floral, fruity taste of these grapes. Two weeks of controlled-temperature fermentation. Aged in steel tanks for three months. Bottling in February.

Colour: purplish salmon with gold reflections.

A fresh, fruity wine. Its aromas are clean and subtle with citrus notes and herbaceous hints on the nose. It is dry and crisp on the palate. It has very good sapidity and persistence.

Food pairing: best drunk with aperitifs or appetizers. It also goes with fish dishes like prawn and lobster cocktails, or light seafood starters.

Serving temperature: 8-10°C
