Primitivo from 65-year-old vines
Harvesting and wine-making: Grapes are picked up by hand and gently laid down into little airy crates, arriving as whole bunches at the winery. Once there, grapes are further selected using an advanced sorting table.
Bouquet: From our old vines, symbols of old stories and whole lives lovely devoted to our land, this wine grows out, a true expression of a scrupulous wine-making expertise.

Negroamaro 100% Selected from the vineyards of the Maime estate in San Pietro Vernotico (province of Brindisi).
The weather of the 2015 growing season was decidedly “Mediterranean”, marked as it was by a springtime of regular temperatures and humidity and then a decidedly hot and dry summer.
The excellent balance between vegetation and grapes in our vineyards led, nonetheless, to a proper and sustained growth of the vines and ripening of the fruit, to the point that the Negroamaro harvest took place during the first week of September, in line with the historic pattern of our estate.

Apollonio
2020
This is a scented, easy-drinking white wine. Straw yellow in colour with light green hues. On the nose, it offers elegant fragrances with herbaceous undertones and aromas of fresh fruit. Dry, smooth and medium-bodied on the palate, it has a round, crisp taste with a quite persistent fruity and almond finish.
Food pairing: a structured wine, best drunk withwhite or cured meats, seafood, and fresh cheeses.
Serving temperature: 10-12 °C
Recommended glass: a medium tulip glass with an outward-flared rim, as it directs the wine to both sides of the mouth, where the crisp and savoury taste of young wines is best perceived.
Winemaking/Aging: soft pressing, so as to preserve the floral, fruity taste of these grapes. Two weeks of controlled-temperature fermentation, then in steel tanks to complete its maturation. Aged in Acacia barrels for three months. Bottling in February.
Colour: light straw yellow, with gold reflections.
Alcohol: about 12-13%.

Produced from 100% Negroamaro grapes picked in the earliest hours of the morning and immediately taken to the cellar where they undergo a gentle crushing. From a very short contact between the skins and the must is born a wine with a bright pink colour, a floral and fruity bouquet and a full and elegant flavour, with a light, fruity aftertaste which lingers in the mouth.

Pairing: Excellent with cheese soufflé, vegetable torts, and intensely flavored seafood and soups. Eggs, poached or scrambled, are also a favorite pairing.

Full-bodied, well-structured palate. It has vivid undertones of ripe fruits and spices with a pleasant, subtle astringency. An excellent, lingering, fruit-driven finish enriched with mellow notes of coconut. Due to its full body, it is best drunk with game dishes.
Food pairing: excellent withgame, grilled or stewedred meats, and beef stews.
Serving temperature: 18 °C
Recommended glass: a large bowl-shaped glass with an inward-curved rim: the wine can fully breathe, and the glass can be held better in hands. It will help the temperature rise gradually, and aid in the release of the complex fragrances of more structured wines.
Ageing: 12 months in American oak barrels, 12 months in bottles.
Colour: intense ruby-red, with bright reflections.
Alcohol: about 14-15%.

Fermentation: first a cold (41° Fahrenheit, or 5° Centigrade) maceration on the skins for five days prior to fermentation in bring out the aromas, the color, and the supple structuring elements of the future wine; the must is then run off its skins and fermented at 64° Fahrenheit (18° Centigrade)

An intense, enchanting bouquet with notes of blackberries and ripe red berries intertwined with spices. On the palate it is full-bodied yet supple, with smooth tannins and a balanced acidity that keeps it fresh. It has a very long finish, with the same fruity notes as those felt on the nose.
