Deep and dense red garnet colour. The nose is elegant and rich, with full, warm and enveloping notes of dried figs, licorice and cherry jam. In the mouth, this wine is well done, honey and kaki predominate. Enveloping taste with powerful tannins, warm and persistent. The final is elegant, revolves around the bitter flavors. The late harvest of grapes, made on September15th, allows a genero us natural drying of the grapes exclusively on the plant, the result is a sensational dessert wine.

Characteristics: a rich and persuasive fruity wine, it perfectly combines important structure, pulpy and lively, with balanced acidity and well-defined tannins.
Food matches: try with pork stew, grilled steaks of Chianina, orecchiette with horse meat sauce, lamb with mushrooms and sausages, rabbit “alla Contadina” with black olives. Ideal with medium-aged cheeses.

Winemaking: after destemming and soft crushing grapes, must fer-ments spontaneously thanks to a pied de cuve of native yeasts, the only ones which increase the expression of our Terroir. After 8 mon-ths of maceration with the skins, at the end of alcoholic and malo-lactic fermentation, wine is soft pressed in order to separate it from grape skins. Natural fining and stabilization, no fining agents added. No filtration.
Ageing of wine on lees: 18 months in steel tank, then 24 months in large wooden barrel, and at least 8 months in bottle. Very low amount of sulphur dioxide added before bottling.
Organoleptic properties: consistent ruby red colour, fruity, spicy and toasty aromas. The taste has a vigorous body, soft and quite tannic, balanced, persistent and raisiny.
Food pairing: red meat main courses, cold cuts, sausages and se-mi-hard cheeses.
Serving temperature: 16-18 °C. Decant wine before drinking it.

Rose del Sud è un vino dal colore corallo intenso. All’olfatto esprime i tratti tipici del vitigno con sentori floreali e di frutti freschi mediterranei.
Il palato è appagato da una buona acidità supportata da un’evidente morbidezza. L’abbondante presenza di glicerina lo rende corposo e avvolgente mitigandone la sostenuta alcolicità. Severino Garofano

The grapes come from old alberello-trained vines of Negroamaro, picked late. The surmaturation, or slight raisining of the grapes, gives the wine a complex structure.
Intense colour with purple tints, tending to garnet. This is a wine which develops all its potential character during refinement in small barrels, a process which stabilizes the colour and softens the astringency of the tannins: the wine acquires a fresh aroma and a regal sumptuosity.

THE VINIFICATION: Traditional vinification with a continuing maceration of
grape skin lasting 7,8 days according to the vintage and the racking-off,
with an evident intensity of colors and scents. When the grape-harvest ends,

the remaining part (40%) in small valuable oak barrels for about

Puer Apuliae or “Son of Puglia”: so was called Frederick II of Swabia, the 13th century Emperor of the Holy Roman Empire who loved this region so much that he had the Castel del Monte, his most incredible and mysterious monument, built here, leaving an indelible memorial for the whole of humanity. Thus we called this wine Puer Apuliae, for being the child of the most representative indigenous black grape variety in central Puglia: Nero di Troia.
