Puer Apuliae or “Son of Puglia”: so was called Frederick II of Swabia, the 13th century Emperor of the Holy Roman Empire who loved this region so much that he had the Castel del Monte, his most incredible and mysterious monument, built here, leaving an indelible memorial for the whole of humanity. Thus we called this wine Puer Apuliae, for being the child of the most representative indigenous black grape variety in central Puglia: Nero di Troia.

Tormaresca

2019

Selected grapes cultivated at our Maìme estate in San Pietro Vernotico (Province of Brindisi), was a positive vintage for the grapes with a long growing season and a slow and gradual ripening of the crop. The high peak temperatures of the preceding vintages were notably absent, and temperatures, wind, and humidity were all quite favorable.
In terms of the size of the crop, it was more substantial due to the positive climate of the entire year: abundant rainfall during the winter and normal and regular temperatures during the spring and summer.
Useful temperature swings from daytime heat to evening and nighttime coolness, along with the established practice of picking the grapes for the white and rosé wines only during the early – and cooler - hours of the day, assisted in achieving grapes of excellent quality with a sustained and refreshing acidity. The harvest of the white grapes at the Maìme estate began approximately a week later than in other recent vintages. The Fiano grapes were picked between September 5th and 10th.

From the legend of Acanto, a Greek nymph changed into a flower after refusing Apollo’s advances.
This pure Fiano is fermented in steel at a low temperature for a fortnight in order to preserve the aromatic characteristics and is then left to age on its own yeasts to enrich the mineral notes and flavour. This is a balanced wine that unfolds in the nose with intense perfumes of fruit and honey and a fresh lively taste with a smooth finish of toasted hazelnut. Served thoroughly cooled, it is ideal with hors d’oeuvres, seafood salads, rice, crustaceans, grilled fish and fresh cheeses.

COLOR: Brilliant gold with sunny, bright nuance.

NOSE: Very intense, as if it were produced in a bee hive rich with floral and fruit aromas. Acacia honey and Cane apple. Orange flower and bergamot.

PALATE: On the palate this wine reveals endless layers of delicate, smooth sensations, with superb balance between its freshness and aromatic character. The sweetness of this wine on the palate reminds some of “kisses desired but never dared to be given…”.

PAIRING: Classic pastries filled with cream or almond paste. Piquant, rich cheeses.

SERVING TEMPERATURE: 14°C. (57°F.).

COLOR: Straw yellow with hints of green.

NOSE: Notes of lily, magnolia, juniper, and linden are followed by ripe fruit and seductive herbaceous aromas.

PALATE: The alcoholic structure and freshness in this wine reward the wine lover with its drinkability and approachability. Its rich finish mirrors its aromas with great balance.

PAIRING: Seafood in general, particularly mollusks and shellfish.
Vegetables and soft cheeses.

SERVING TEMPERATURE: 11° C. (52° F.).

2015

Color: Inexpugnable ruby red, offering the eyes a preview of the wines complex structure, flavors, and aromas.

Nose: Notes of rose and violet emerge in a slow, long-lasting progression, giving way to wild fruit, dried fig, preserves, and vanilla.

Palate: The same aromatic equilibrium reappears in the mouth, releasing delicate progressions of fruit and spice. The rich, balanced flavor of this wine’s components give it its distinctive imprint. And its extreme delicacy closes with ample, persistent flavors in the finish.

Pairing: Well aged ripe cheeses, smoked and spicy cured meats. Intensely flavored meat dishes, ideally complex in their flavor profiles. Ass and horse are among the winemaker’s favorite pairings as are meat-based first courses. This is a wine (as strange as it may sound) that doesn’t mind the company of a good cigar.

Colour: intense and bright ruby

Bouquet: a wide and variegated array, ethereal and fine notes of cherry, blackcurrants, blueberries and blackberries, hints of nutmeg and cocoa.

Taste: warm and pleasant with a great correspondence between taste and nose. The fruit well-amalgamates with the tannins and its fine acidity.

Characteristics: a spontaneous and smooth wine with a modern and dynamic personality, it strikes for its outstanding pleasantness.

Food matches: To be served with “tagliatelle al ragù di maiale”, black “orecchiette” with tomato and ricotta cheese, Saltimbocca alla romana, horse meat “straccetti” in sauce, stuffed aubergines, fried meatballs with tomato sauce, roasted lamb with potatoes. Shortly seasoned cheeses.

A spontaneous and smooth wine with a modern and dynamic personality, it strikes for its outstanding pleasantness.

Apollonio

Vintage 1997

Enveloping aromas with notes of ripe red berries, cloves and plum jam. A captivating balsamic note can be felt during tasting. It has a powerful, well-bodied texture with firm tannins. A persistent finish with the same notes as the nose, and with elegant flavours of chocolate and leather that alternate between the notes of tobacco, spices and wood. Aftertaste is enriched by undertones of cacao and liquorice.

Food pairing: Meditation wine.

Serving temperature: 20°C

Recommended glass: As a long-aged, structured wine, a large bowl-shaped glass with an inward-curved rim is recommended: it can fully breathe, and the glass can be held better in hands better. It will help the temperature rise gradually, and aid in the release of the complex fragrances of more structured wines.

Ageing: 72 months in French oak barrels, 12 months in bottles.

Colour: ruby-red with garnet reflections.

Alcohol: about 15%.
