METODO CHARMATREFERMENTATION: long charmat (9 months). The hand-picked grapes are harvested before their complete ripening, the bunches are pressed and vinified in white and fermented at a low temperature (14°C).The second fermentation (prise de mousse) in pressurised tanks, made in December, lasted about one month. The wine refines on lees for about six moths before bottling.

Medium body, soft and very fresh.Food pairing: ideal with fishes, shrimps and shellfishes; try it with vegetables risotto.Serving temperature: 8-10°C.
