METODO CHARMATREFERMENTATION: long charmat (9 months). The hand-picked grapes are harvested before their complete ripening, the bunches are pressed and vinified in white and fermented at a low temperature (14°C).The second fermentation (prise de mousse) in pressurised tanks, made in December, lasted about one month. The wine refines on lees for about six moths before bottling.
