2013 was a vintage with positive weather throughout the entire year, abundant rainfall during the winter months and regular temperatures during the spring and summer seasons. The peak temperatures which characterized the previous vintages were absent; temperatures, winds, and humidity were all favorable.
Positive temperature swings from daytime heat to evening and nighttime coolness assisted in achieving an excellent physiological ripening of the grapes, a interesting aromatic profile, and a vigorous acidity.
As an early-ripening variety, Primitivo felt to a greater extent the consequences of delays in ripening, and the grapes, in fact, matured a week later than usual, during the first ten days of September.

Rivera
2013
Il Falcone is one of the most prestigious red wines of Apulia whose name was chosen by Rivera to remem-ber Emperor Frederick II of Swabia who built the castle called Castel del Monte near Andria so that he could indulge his passion for falconry. The castle later gave its name to the surrounding DOC area. The wine is obtained with carefully selected grapes sourced from the oldest among the estate’s vineyards. In the blend of indigenous grape varieties, the main grape, Nero di Troia, gives to the wine its great character and structure, while Montepulciano contributes to its roundness. The maturation for 14 months in oak and for a further year in the bottle contributes to refine its great structure and develop its classic personality and elegance.

Harvesting and wine-making: Delayed grape harvest with a light over ripening on the plant. Grapes are picked up by hand and gently laid down into little airy crates, arriving as whole bunches at the winery.

Recommended glass: a large bowl-shaped glass with an inward-curved rim: the wine can fully breathe, and the glass can be held better in hands. It will help the temperature rise gradually, and aid in the release of the complex fragrances of more structured wines.
Ageing: 12 months in Acacia barrels, 6 months in bottles.
Colour: bright salmon pink in the glass, with hints of gold.

Color: Inexpugnable ruby red, offering the eyes a preview of the wines complex structure, flavors, and aromas.
Nose: Notes of rose and violet emerge in a slow, long-lasting progression, giving way to wild fruit, dried fig, preserves, and vanilla.
Palate: The same aromatic equilibrium reappears in the mouth, releasing delicate progressions of fruit and spice. The rich, balanced flavor of this wine’s components give it its distinctive imprint. And its extreme delicacy closes with ample, persistent flavors in the finish.
Pairing: Well aged ripe cheeses, smoked and spicy cured meats. Intensely flavored meat dishes, ideally complex in their flavor profiles. Ass and horse are among the winemaker’s favorite pairings as are meat-based first courses. This is a wine (as strange as it may sound) that doesn’t mind the company of a good cigar.

2014
Winemaking: after destemming and soft crushing grapes, must fer-ments spontaneously thanks to a pied de cuve of native yeasts, the only ones which increase the expression of our Terroir. After 8 mon-ths of maceration with the skins, at the end of alcoholic and malo-lactic fermentation, wine is soft pressed in order to separate it from grape skins. Natural fining and stabilization, no fining agents added. No filtration.
Ageing of wine on lees: 18 months in steel tank, then 24 months in large wooden barrel, and at least 8 months in bottle. Very low amount of sulphur dioxide added before bottling.
Organoleptic properties: consistent ruby red colour, fruity, spicy and toasty aromas. The taste has a vigorous body, soft and quite tannic, balanced, persistent and raisiny.
Food pairing: red meat main courses, cold cuts, sausages and se-mi-hard cheeses.
Serving temperature: 16-18 °C. Decant wine before drinking it.
