Vino ottenuto con uve provenienti da vigneti tipici del Salento, siti in agro del comune di Guagnano, ed aventi età media di 15-20 anni.
Il Negroamaro è l'uva prevalente alla quale si associa il Cabernet Sauvignon nella proporzione massima del 15%.
Il sistema di allevamento è in prevalenza l'alberello pugliese con densità di impianto di circa 4000 ceppi per ettaro.

Sparkling brilliant wine of a light pink colour called “ onion peel” with a fine and persistent perlage.
The nose is rich and intense with hints of bluberry, redcurrant and rose petals.
To the palate it is smooth and elegant enriched by a nice freshness. Perfect as aperitif and with shellfish, nice also with medium aged chesees “Metodo Classico”- the base wine ferments in bottle for about 2 months, followed by a refinement “sur lie” for about 30 months.

Vino D.O.C. Primitivo di Manduria
Chiodi di Garofano è un vino dal color rosso rubino intenso con riflessi violacei.
Il profumo è fruttato, ampio e complesso. Si percepiscono sentori di frutti di bosco, prugna e fichi secchi ingentiliti da delicati accenni di spezie dolci e marzapane.
Al palato conquista con un buon tannino supportato da un’importante concentrazione alcolica. Vino robusto, di buona complessità, esprime i caratteri più autentici del vitigno.
La sua imponenza suggerisce abbinamenti con primi piatti strutturati, arrosti, brasati e formaggi di media-lunga stagionatura.

Apollonio

2017

A ruby-red, almost impenetrable wine that suggests a rich bouquet. Balanced and full bodied, it gradually discloses a vinous fragrance that gives way to notes of blackberries, sour cherries and currants, with hints of spices in the finish. It is supple, round and full-bodied in the mouth, with persistent tannins.

Food pairing: excellent withgame, and grilled or stewedred meats.

Serving temperature: 18 °C

Recommended glass: a large bowl-shaped glass with an inward-curved rim: the wine can fully breathe, and the glass can be held better in hands. It will help the temperature rise gradually, and aid in the release of the complex fragrances of more structured wines.

Ageing: 12 months in French oak barrels, 12 months in bottles.

Colour: almost impenetrable ruby-red.

Alcohol: about 14-15%.

COLOR: Brilliant gold with sunny, bright nuance.

NOSE: Very intense, as if it were produced in a bee hive rich with floral and fruit aromas. Acacia honey and Cane apple. Orange flower and bergamot.

PALATE: On the palate this wine reveals endless layers of delicate, smooth sensations, with superb balance between its freshness and aromatic character. The sweetness of this wine on the palate reminds some of “kisses desired but never dared to be given…”.

PAIRING: Classic pastries filled with cream or almond paste. Piquant, rich cheeses.

SERVING TEMPERATURE: 14°C. (57°F.).

Tormaresca

2018

The 2014 vintage, marked by anomalous climate during the growing season, was a difficult and rainy one.
Early spring was characterized by above average temperatures, creating the conditions for a bud burst which arrived a week earlier than the normal period. As the growing season followed, however, a very cool and quite rainy spring and summer slowed down the various phases of growth and development of the plants and grapes and caused outbreaks of vine diseases, above all downy mildew. With unfavorable conditions of this sort, a particularly meticulous, attentive and timely viticulture was necessary in order to preserve healthy conditions in the vineyard and grapes of real quality.
The Chardonnay for Pietrabianca was picked between the 22nd and the 28th of August, while the Fiano was harvested in mid-September with an aromatic profile and a vibrantly savory personality of much finesse and elegance.

Tormaresca

2015

The climate of late autumn and winter was c rain. The vineyards, accordingly, were able to accumulate reserves of ground water for the warmer months to come. Spring was rather mild, and sunny days and warm temperatures favored the a positive growth of vegetation and formation of the grape bunches. Temperatures rose from June on and stabilized at As the growing season continued through the summer months scarce and infrequent, leading to a proper ripening of the crop. The picking of the Negroamaro took place in mid September
